The producer Olivier Calix believes this wine is dealt a wonderful hand: 100+ yr. old vines, 200m altitude, roots deeply embedded in limestone, and singed by saline sea winds.  In the cellar it’s all trad (pellicular maceration, indigenous yeasts, direct pressing, if you must ask); it translates to extracting more from the whole grape, rather like loose-leaf tea in a pot. It produces more flavour. Knowing when to stop takes 20 years of trial & error. 10,000 hours.  And you’ll finish it in 1.  ABV: 13.5%
