Flavour Pairing: We loved this wine with a hearty winter stew, but it also shines alongside any grilled meat, offering a versatile pairing for your favourite dishes.
This bottling is crafted by Gilles Troullier, the former winemaker and cellar master for Chapoutier’s Roussillon efforts. Now dedicated to his own estate, Gilles produces some of the most exciting wines in the region. This 2022 vintage of Boreal is deeply coloured, rich, and almost dense on the palate, showcasing powerful yet effortlessly balanced flavours.
Named after the north wind that continually buffets the small vineyard plot, Boreal reflects the intensity of its unique terroir. The head-pruned vines are tended and harvested entirely by hand, with native yeasts used for fermentation in concrete vats. The wine is aged in neutral oak barrels, allowing the true character of the grapes to shine through. Stylistically reminiscent of the Northern Rhône, this stunning Syrah exhibits the depth and elegance of Roussillon’s finest wines.
